INGREDIENTS

500 grams Whole Milk
-
500 grams Cream 36%
-
0.5 grams Bourbon Vanilla Bean Pulp
-
Pinch Fleur de Sel
-
150 grams Orange Blossom Honey
-
1 drop Red Food Coloring
-
200 grams Dark Chocolate Couverture, 70% chopped fine

Optional Toppings:
Freshly Whipped Cream, Cinnamon, Nutmeg, Crushed Peppermint, Mini Marshmallows
METHOD

1. Combine the milk, cream, vanilla, salt (fleur de sel) and orange blossom honey and bring to a simmer.
​
2. Place the chopped chocolate into a bowl and pour the simmering milk mixture over; allow to sit for 2-3 minutes. Whisk to combine

3. Place the bowl of sipping chocolate over a double boiler and heat it 185℉ for 3 minutes; remove and chill overnight.
​
TO SERVE:
1. Place sipping chocolate over a double boiler and heat to 190℉.
2. Whisk to emulsify and serve.

Fortified Wine
Fortified wines became the wine of the day because they were extremely resilient on long sea journeys. What’s interesting about all of this is that production techniques for making fortified wines haven’t really changed since they were perfected in the 1700s.
